The Power of Pivoting, Hospitality and a Love of DC: A Conversation with Susan Holt

Welcome to another exciting episode of Lunch with Shelley. In this latest installment, our special guest is none other than the extraordinarily talented Susan Holt. Not only is she a dear friend and wonderful neighbour, but Susan is also a highly accomplished chef and culinary teacher. In this episode, we take her to LUNCH at Claudio’s table for her very first dining experience there!

Susan Holt: A Culinary Journey

Susan’s journey in the culinary world is nothing short of inspiring. After graduating with honours from L’Academie de Cuisine, one of the top culinary art schools in the country, Susan made her mark in various renowned restaurants in Washington, D.C. Her most notable positions include executive sous-chef at Georgetown’s famous 1789 restaurant, and working alongside two-star Michelin chef Gerard Pangaud at The Dining Room at the Ritz-Carlton.

From Teaching to Entrepreneurship

Susan’s passion for teaching led her back to L’Academie de Cuisine, where she began sharing her knowledge and skills with aspiring chefs. But she didn’t stop there. Susan exercised her entrepreneurial spirit by opening CulinAerie, a popular recreational cooking school based in D.C. At CulinAerie, people of all skill levels can learn the art of cooking in a fun, friendly environment.

We discuss the realities of working in both the front and back of a restaurant ‘house’, and Susan gives us a sneak peek into her new endeavour as a budding author of an historical, epicurean romance novel.

Bonus: A Soup Recipe!

As a bonus, we get a fantastic soup recipe from the culinary maestro herself! We promise, you’ll want to try this at home.
